Use and Care
There is a ‘break-in’ period for diamond sharpeners. When first use, the surface will appear to be especially rough. This roughness is due to the final manufacturing process and will be removed over time without impacting performance. As the diamond surface wears down, more and more diamond grits are exposed and the sharpener cuts faster.

PUSH the blade AWAY from you like you are trying to carve a thin slice off the top of the stone. Push the knife blade across the stone as you push to sharpen the cutting edge all the way out to the tip of the blade (See Fig. 2). Repeat this PUSHING stroke several times. Remember to hold the angle as you push and try to maintain a consistent sharpening angle with each stroke. This is the key to obtaining the sharpest cutting edge. |
Next, place the sharpening angle guide on the other end of the stone to sharpen the other side of your blade. Again, lean your blade on the angle guide to get the correct sharpening angle (See Fig. 3). |
PULL the blade TOWARD you like you are trying to carve a thin slice off the top of the stone. As you pull the blade down the length of the stone, pull the blade across the stone to sharpen the entire cutting edge. Let the tip come off the edge of the diamond stone (See Fig. 4). Repeat this PULLING stroke the same number of times as you did on the opposite side of your blade and try to maintain a consistent sharpening angle with each stroke. Continue sharpening both sides of your blade until you feel that your blade is truly sharp. If you started with Coarse 325 grit (45 micron) side, move to 1200 grit (9 micron) side, repeating the sharpening process. |

I own a lot of diamond plates, including Atoma and DMT sets. Comparing plates themselves, SHARPAL has much more consistent grit than DMT and requires less wear-in before it's useful. A frequent problem with diamond plates is that they can scratch your blade first time you use them and it requires some time to "stabilize" and shear sticking diamonds away. DMT particularly suffers from that problem, SHARPAL was good right off the bat and did not require any wear-in. Grit feels surprisingly consistent. Atoma stones also have similarly high grit quality, but I personally don't like their dotted pattern because it leaves striations on blades, so SHARPAL leaves very uniform scratch pattern in comparison. Finally, it's surprisingly hard to find good two-sided diamond plates and currently SHARPAL is one of the very few ones that are actually high quality.
156N vs 162N:
The difference is the size (6in vs 8in) and it's quite important. Unfortunately when I was buying, only the 6in version was available and I really wish I bought a bigger one instead. Larger stones are easier to use, they're faster and they live longer (due to a larger surface area).
Accessories:
For some reasons most diamond stones come in nasty plastic bags or (as is the case with DMT) in those awful plastic blister packages that you can't ever reseal once opened. Come on, manufacturers. I'm paying $50+ for the stone, can you include at least a container of some sort? Anyway, SHARPAL does come with a box: it feels pretty cheap, but well designed and functional. The hinge is good, the latch works (although it's plasticky), the stone sits inside very securely and does not rattle. There's a nice grid structure that prevents water pockets from forming (which is a common problem with plastic bags). Crucially the box has a non-slip rubber base and a mounting bracket for the stone on top which is perfectly adequate and usable as a base while sharpening.
Angle guide:
Additionally the stone comes with an angle guide (that seats neatly in the box, by the way, don't miss it). It might seem like a gimmick, but actually it's pretty well designed and is surprisingly functional: it has a magnet that latches onto the plate and helps you develop muscle memory for what each angle feels like. Angle consistency is arguably the most important factor when sharpening a blade on a plate, and this accessory really helps you develop a muscle memory to keep it consistent.
Verdict:
The stone is really good when compared to the competition. Double sided diamond stones are rare, high quality grit diamond stones are rare and this is both. Accessories feel cheap, but they're surprisingly well designed and functional. 6in plate is alright, but really try to get the 8in version if you can.
Sharpal's description of their product checked all the right boxes: monocrystaline diamonds, electroplated bonding, super flat plate, storage and holding case. With the 3 year warranty and the great price, I decided I had nothing to lose, so I took the plunge.
I used it for the first time yesterday (along with an off-brand "Eclipse" style honing guide that I also recently purchased). I had a #4 plane iron and a set of 4 chisels that needed sharpening. The iron is used (~100 years old) and just needed a basic touch-up, but the chisels were brand new and had never been set up or sharpened (except by the factory). In all cases, the Sharpal system performed fantastically well. All of my worries about only having a coarse and extra fine grit (and stroping) step in my sharpening process were laid to rest. These two grits along with the strop were all I needed to get hair-shaving-, magazine-paper-slicing-sharp edges on my tools.
Sharpal says to sharpen dry, but I decided to use some Windex for this first go-around (based on what I've learned from the web). It worked just fine. I will likely try to sharpen dry, like Sharpal recommends, next time around. One thing I noticed is that, when I was all done, it took a bit of effort to clear out all of the metal dust, even though I was using the Windex to keep metal from building up. I have to wonder, then, if the Windex made much difference. In any case, when I was finished, I rinsed the plate under the sink and scrubbed it with my fingers (I didn't have a nylon brush handy). It came clean at the expense of my finger prints. :)
The base/case works very well. It protects the plate while stored, has a handy cutout to hold the "angle finder" pyramid and holds the plate perfectly still while sharpening due to its foam rubber bottom.
Back to that angle finder pyramid. This was a pleasant little bonus. I have a few high end Japanese kitchen knives that I have traditionally sharpened with a Lansky sharpening system (the one with the the blade clamp and the skinny whetstones that go on the end of a metal rod). I decided to try sharpening my chef's knife with the Sharpal whetstone. This particular knife has a 20° angle, so that's the side I used on the pyramid. It was surprisingly easy to do this. I think I only made 10 passes on each side of the blade with the coarse grit, then the fine, then my stropping leather. That blade was easily the sharpest it has ever been. So, as a bonus, I now have a better, simpler way to sharpen my knives!
I can't really comment on longevity yet since I've only had it for a few days, but so far, it looks like something that will last WAY beyond its 3 year warranty.
