A long-gone friend of ours recommended this kind of roaster for turkey. While another method (separating out the meat and "spatchcocking" the breast will cook very quickly in the oven and give good even cooking, still, this roaster gives the most moist type of turkey. I recommend a probe thermometer. Some turkeys can be bony (ours this year was surely a tom, had huge bones and was done way before we planned) -- those can cook unreasonably quickly and surprise you with a very over-done bird. The probe will alert you when the bird has reached the proper temperature and then you can turn off the roaster and rest it for a half hour before carving. Another plus of this method is you get plenty of great broth at the bottom because it doesn't evaporate off. Gravy is a matter of straining, defatting if you want, and thickening. I use potato flour but a roux or beurre manie or cornstarch works as well.
If cleanup is annoying (this has a coating for simple washing out) you can always line the roaster with those special bags.
Some typical questions: will you get a mahogany-brown, crisp skin on the bird? No. You will see some browning on top and sides, but this is a moist roaster and the constant dry heat needed to glaze and crisp skin won't happen. This doesn't bother me--I want moist turkey and I always carve in the kitchen before serving; the showing carving at a table takes a lot of skill and is messy, if you ask me. Easier to remove the breast meat, the legs and wings and then cut across the grain and lay out the turkey on a heated platter and serve people what cuts they wish. And after dinner, the turkey is ready to be portioned out for the gift of leftovers to take home--or to pack away for turkey pot pie, turkey sandwiches and soups. Something you don't want to be doing after a big feast.
But if you want a big showy roast of an entire bird on the table, this is not for you.
- The roaster is large, but it's lightweight.
- The liner is easy to clean. Dish detergent and a plastic scrubby.
- The stainless steel shell is handsome, looks great on the counter.
- It comes with a rack with two folding handles so that lifting the roast from the cooking container is easy--but you still need hand protection.
- It has two very tiny steam vents on the lid to keep your roast from getting steamed (like in a slow cooker); the chicken I made actually had crispy skin.
- Ideal for cooking your holiday main dish; leaves your built-in oven available for the many side dishes.
- The outside surface becomes a little warm while the roast is cooking. Keep it far from small children.
I plan to stuff a turkey long before Thanksgiving just because this thing is so much fun to use. Plan to use it for steamed tamales at Christmas too.
3 days before t-day, I began brining the turkey in the roaster (without power), refilling the ice every 12 hours. It was able to keep the brine at or below 40 degrees, even sitting a mere 5 feet from my roaring wood stove; the insulation on this thing is quite impressive.
On t-day, we washed the roaster, then put the turkey on the rack inside with a little water, onions, apples, and celery, and set it to 350. Standard turkey roasting is 20 minutes per pound of bird, which should have given us about 5 hours of cooking time. The roaster finished the job, including a CRISPY brown skin, in 3.5 hours. It heated the bird evenly, leaving all the skin just beautiful and delicious and the meat moist and tasty. No need for a foil cover to protect the breast from drying out, though I did wad up a couple foil balls to hold the wings away from the sides of the pan.
After we ate, I left the carcass in the roaster, filled it with 15 quarts of water, and let it simmer for 24 hours. I then used that stock to make 20 quarts of incredible turkey soup... all of this IN the roaster.
With such a long period of constant usage (almost 48 hours), I expected this thing to break down or struggle, but it absolutely has not. It's running smoothly, heating evenly, and keeping a constant temp (as checked with my food thermometer). I've not been a huge fan of Oster products, due to their low-quality and tendency to break under pressure, but I couldn't be happier with this product. This was a heck of a maiden voyage for my new roaster, and it performed above and beyond what I was expecting.
